Tuna Salad

I think everybody is wondering how can you make tuna salad without mayo. What will hold this salad together? Well a slice of bell pepper, a salad leaf or the fork :-)
If you have a better tuna salad idea please share it with me. Thanks.

Ingredients:

1 can of tuna, drained
1 tomato, cut in small pieces
2 green onions, chopped
1/2 red bell pepper, chopped
parsley, chopped
salt

black pepper
lemon juice or vinegar dressing

Directions:


Arrange lettuce on a plate.
In a medium bowl mix together tuna, tomatoes, bell pepper, green onions and parsley.
Season with salt and pepper.
Drizzle with lemon juice or vinegar dressing.
Taste and adjust seasoning if needed.
Serve on lettuce.

Hungarian Cheese Spread - low fat version

Ingredients:

1/2 pound Liptauer or farmers cheese at room temperature
1/2 cup fat free cottage cheese
1 teaspoon sweet Hungarian paprika
1/2 teaspoon pounded caraway seeds
1 small grated onion or 3 green onions, finely chopped
1/2 teaspoon mustard
Salt
Black pepper

Serve with:
peppers
capers
toasted protein bread

Makes about 2 cups 

Directions:

Put cheese into a medium bowl. With an electric mixer beat in cottage cheese (original recipe is with 1 stick of unsalted butter). Add remaining ingredients, combining thoroughly. Adjust seasonings. Refrigerate at least 2 hours for flavors to marry. Remove from refrigerator 15 minutes before serving.
Serve on bread, or cut the ends of pepper, remove seeds and stuff pepper with the cheese mixture. Refrigerate for 2-3 hours and slice with a sharp knife. Sprinkle with capers or caraway seeds.

Note:
If you want to turn this into a veggie dip, add more cottage cheese.

Bell Pepper Eggs in a Hole

Servings: 2
Ingredients:

4 eggs
4 slices of bread, toasted
4 rings of bell pepper - 1/2 inch thick (any color)
salt
black pepper
Pam spray

Directions:

Get your skillet nice and hot over medium heat.
Spray pan with Pam and put in your bell pepper ring.
Crack an egg directly into each bell pepper.
Cover with lid and reduce heat to medium-low, or low, and let cook until eggs are set.
Season with salt and black pepper.
Serve with protein bread, low fat cottage cheese, zucchini, or string beans or sliced or stewed tomatoes.

Feta Cheese Dill Truffles

Ingredients:
4 oz cream cheese, softened
4 oz feta cheese, crumbled
Cottage cheese or greek yogurt (optional)
2  teaspoons green onion, chopped
1/4  teaspoon  black pepper
1/2  cup  chopped fresh dill

tomatoes
olives
cucumbers
or other fresh vegetables


Directions:
In a medium bowl thoroughly blend feta cheese, cream cheese, green onion, black pepper and fresh dill with an electric mixer. If the feta is very dry and the mixture doesn't hold together well, add some greek yogurt or cottage cheese. Taste and adjust seasoning.
Cover, and refrigerate at least 4 hours.
With wet hands form little balls or use a cookie baller to make the perfect round shape. Roll each ball in chopped dill.
Serve with crackers, olives, tomatoes or cucumber slices.

You can substitute lunch any day with:
1/2 cup low-fat pot cheese or cottage cheese, mixed with 1 tablespoon of low-fat sour cream; sliced fruit, all you want; 6 halves walnuts or pecans, whole or chopped and mixed with with the above or sprinkled over the fruit; coffee/ tea/ no-sugar diet soda of diet soda of any flavor.


Either low-fat pot cheese or low-fat cottage cheese may be used; both are excellent.

I like to mix fat free farmers cheese (pot cheese, white unsalted cheese) with a little fat free greek yogurt with raisins and sweetener (instead of cottage cheese).

Cheese Mushroom Frittata

Ingredients:

1/2 lb. button mushrooms
oil spray
2 teaspoon dry thyme
4 eggs
1/2 cup shredded Parmesan cheese
1/4 cup grated Gruyere cheese




Directions:


Preheat oven (broiler).
Wipe mushrooms clean; then slice.
Spray nonstick skillet with oil.
Sauté mushrooms for about 5 minutes. Don’t overcrowd.
In a medium size bowl beat eggs, Parmesan cheese, thyme, salt and black pepper.
Pour over mushrooms in skillet and cook until almost set, but still runny on top, about 2 minutes. Sprinkle with gruyere cheese.
Broil until cheese is melted and browned, about 3 to 4 minutes.
Remove from oven with oven mitts and slide frittata onto a serving plate.
Cut into wedges.
I had some Prosciutto di Parma slices and I served it with Prosciutto and spinach leaves with balsamic vinaigrette.

Yogurt Salmon Salad

Ingredients:
1 can of salmon (tuna), drained
¼ cup celery, chopped
¼ cup parsley, chopped
3 tbsp onion, chopped
1 dill pickle, chopped
2-3 tbsp plain lowfat yogurt
Salt and pepper to taste


Directions:
Mix the all ingredients together in a bowl.
Season with salt and pepper.
Serve on a bed of greens, green pepper or make salad wraps.

Cubed pork meat with sauerkraut

Ingredients:
1 lb lean pork meat cubed
1 1/2 lbs. sauerkraut, rinse and drained
1 white onion, chopped
oil spray to brown the meat
2 Bay leaves
1-2 cups of water
salt and pepper to taste


Directions:
Brown the meat in a large pot. Don't overcrowd.
When meat is browned add chopped onions and sautee until soft.
Put in the drained sauerkraut and bay leaves.
Add water, cover and cook slowly for about one hour, or until meat is tender.
Season with salt and black pepper. (Taste before adding salt - sauerkraut can be very salty)
Serve hot with a slice of fresh bread.


This serves 4 and freezes well.

Note: Rinse well if the sauerkraut is very salty  or sour. Some people prefer to serve this dish with a dollop of sour cream and fresh bread.

Baked Chicken Spinach Rolls

Ingredients:


2 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
Frozen chopped spinach
2 cloves garlic - crushed
shredded cheese
feta cheese
1 egg
salt
black pepper





Directions:


Preheat the oven to 350 F.


In a pan, saute garlic in oil on low heat. Add spinach and cook for a few minutes until there is no more liquid. Season with salt, black pepper and nutmeg. Turn off heat, add shredded cheese, feta cheese, one egg and mix well. Let it cool.


Lay the chicken breasts out on a clean surface and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach and secure with toothpicks.

Place aluminum foil in a shallow baking dish (for easy cleaning). Arrange the rolls in the baking dish.


Bake for 40 minutes in the preheated oven, or until chicken is browned and juices run clear.

For the potatoes: Lay a piece of aluminum foil on a baking tray. Cut the baby potatoes in half, put them on the tray, coat with a little olive oil, salt and pepper on top. Bake in the oven turning once, for about 25 minutes until golden brown and tender. You can add cracked cloves of garlic and rosemary.

(Put the chicken in the oven first, then prepare baby potatoes and place in oven).

Let the meat rest for a couple of minutes on a cutting board, slice and serve with hot baby potatoes.

NOTE:
I had some guests and this is the reason I had potatoes as a side dish (and I cannot imagine anything else).

Greek Yogurt with Fruits and Honey

I wish I was one of those people who didn't crave sweets. It's so hard sometimes.
So I decided to make a healthy dessert with fat free yogurt, fruits and honey. Deeeeeelicious.

Ingredients:
8 oz. greek yogurt (I used Fage fat free yogurt)
fresh fruit - handful fruit of your choice
2 tablespoon honey
roasted almonds or walnuts

Directions:
In a glass, put half of the yogurt, top with fruits, another layer of yogurt and than more fruit on top.
Drizzle with honey, sprinkle with slivered almond or walnut pieces.

You can sprinkle it with cinnamon; top it with cereals, granola for a nice and healthy breakfast; try it with vanilla yogurt - use your creativity.

Baked Turkey Thigh

Saturday is Roast turkey or chicken with salad of tomatoes and lettuce; grapefruit or fruit in season; coffee/tea.

I had some turkey thigh today. Here is how I cooked it.

Combine minced garlic and fresh rosemary - make a paste.
Separate turkey thigh skin from flesh and smear mixture on meat after applying salt and pepper.

Fold skin back over meat.
Put more of mixture on skin.
Roast for 10 min in 425 F oven then lower to 350 till done.
Place the meat thermometer in the thickest part of thigh away from the bone of the turkey to check the internal temperature. The temperature must reach a minimum of 165F.
If you don't have a meat thermometer pierce the meat with a fork - the juices should be clear with no trace of pink.

Rest meat before serving - resting allows for the redistribution and re-absorption of the juices in the meat.

Remove skin. Serve with salad.

Green Beans with Cherry Tomatoes

I like this side dish with any meat, grilled, broiled, name it. This is very easy to make and it takes just a few minutes.


Cook the green beans in a large pot of boiling water until just crisp-tender, about 3 minutes. Drain and rinse in cold water. Drain well; set aside.
Melt a teaspoon of butter in a large skillet over medium heat. Add garlic and saute for about 1 minute, but not until it's browned. Add the green beans and cherry tomatoes and cook, stirring frequently, until tomatoes begin to burst.
Season with salt and pepper, to taste.
Transfer to a serving bowl, and serve.

Note: To save time you can use drained canned green beans instead of fresh green beans.
