This takes the humble meatball into the stratosphere! The feta cheese makes it extra moist, and give the recipe a Mediterranean flair. Serve these meatballs at your next party.

Ingredients

2 pounds ground lamb
2 cups diced onion
3 minced garlic cloves
2 tablespoons plus 4 tablespoons olive oil, divided
1 tablespoon salt
1 teaspoon pepper
1 tablespoon chopped fresh rosemary
1 tablespoon ground dried lavender
2 cups breadcrumbs
4 large eggs
1/4 cup chopped fresh parsley
1 1/2 cups crumbled feta cheese

Preparation

In sauté pan add 2 tablespoons olive oil and heat over medium heat.
Add onions and garlic sautéing until tender. Remove from heat.
Fold in rosemary and lavender. Set aside to cool and allow flavors to combine.
Combine lamb, breadcrumbs, eggs, parsley, salt and pepper in a large bowl and gently mix.
Add feta, onions and garlic to the lamb mixture.
Form into 1-ounce balls.
Sauté meatballs in olive oil for 10 minutes over medium heat or until brown on all sides.
Serve warm.
