Rotisserie Chicken with Salad

No time to cook? No problem. Rotisserie chicken is the solution.
Saturday night is turkey or chicken and sunday for lunch is the same.
Just go and buy one, make a salad and the dinner is ready.
Do you have leftover chicken? That means you have lunch next day :-)

This is the hard part: REMOVE THE SKIN. Just close your eyes and do it. Serve it with salad. Enjoy it.

Baked Turkey Thigh

Saturday is Roast turkey or chicken with salad of tomatoes and lettuce; grapefruit or fruit in season; coffee/tea.

I had some turkey thigh today. Here is how I cooked it.

Combine minced garlic and fresh rosemary - make a paste.
Separate turkey thigh skin from flesh and smear mixture on meat after applying salt and pepper.

Fold skin back over meat.
Put more of mixture on skin.
Roast for 10 min in 425 F oven then lower to 350 till done.
Place the meat thermometer in the thickest part of thigh away from the bone of the turkey to check the internal temperature. The temperature must reach a minimum of 165F.
If you don't have a meat thermometer pierce the meat with a fork - the juices should be clear with no trace of pink.

Rest meat before serving - resting allows for the redistribution and re-absorption of the juices in the meat.

Remove skin. Serve with salad.

Pan Seared Meat with Mustard

I have no recipe for this, I don't even know if there is a recipe or a name for this dish. I cooked it several times and I love it. You can use pork, turkey or chicken.

Spray a large pan with oil.
Dry  meat cubes on all sides with a towel. Season liberally with salt and pepper. Sear in batches to develop a nice crust all over. When meat is cooked add 1 clove of garlic, crushed. Mix well and add mustard to the meat. Stir to coat each piece of meat with mustard and cook for one more minute. Remove from the pan and serve hot with salad
